Shatkora is primarily grown in the Sylhet division of North Eastern Bangladesh. It is not very widely known, but its scientific name is citrus macrotera. The fruit is about 6-7 cm in diameter, has a fairly smooth moderately thick rind and id yellow when ripe. The pulp of the fruit is greenish yellow and dry. The juice is very sour and somewhat bitter.
The rind of the citrus macrotera, is processed like a vegetable and liquidised before being used in our sauce. A timely process with accurate measurement creates a unique spicey, citrusy, aromatic and sour taste. A well balance flavour, with the three layers of natural heat.
How to use – If you like a traditional curry, beef, mutton or chicken use it as an accompaniment during the eating or at the end of the cooking process.
Marinate/Basting – works well with fish dishes, also marinate in types of meat and vegetables, longer the time to marinate the better the taste and flavour. Keep basting during baking or bbq process to create layers of flavour.
Dips and condiment – Try the sauce with some of your favourites like pizza, tacos, chips, chicken wings, samosa, kebabs and anything else you can think of.
